Chlorophyll Green is extracted from young green arbequine olives rich in chlorophyll. It is a green oil produced from the first harvest during the months of October and beginning of November, when the fruit is not yet fully matured and the olives are still rich on this pigment that gives to the oil a characteristic green colour and a slightly bitter taste.
At this stage of maturity the olives do not produce the same volume of oil than fully matured fruits, but relatively low yields with a stronger and particular taste; fruity though slightly bitter, slightly pungent with aftertaste of tomato and artichoke.
